The salt and the vinegar are mythical ingredients used from remote times in the Alchemy, in all the religions, magic rituals, etc. is traditional elements of the hospitality in many countries.
For example, according to Carlos' Military Ordinances III, the soldiers were entitled to demand them where lodges.
The ritual of the salt and the vinegar is based between both on a reaction compound that could locate in the frontier between the physical-chemical thing and the witchcraft. It is a very old, debatable process of cleaning if one wants, but that in the practice it eliminates the harmfulness or the maleficio in most of the cases.
To make the ritual he throws a handful of marine salt or also call fat salt or stone salt in a bowl of mud - a pottery vessel or glass serves equally - that contains some vinegar in the bottom.

In accordance with the laws of the chemistry, this reaction should take place or whenever it is operated in the same way or never. Reason is not reproducible and doesn't he/she repeat every time that we apply the same conditions?
When in the first operation there have been ascent and spill of salt and in second o'clock, - with the same vessel or another similar one, the same quantity of salt and vinegar, of the same origin, and to temperature and similar humidity - it doesn't happen anything, it is that there is another external condition that we ignore and that it has changed the factors.
Are they these annoying negatividades that supposedly float for the atmosphere and that then they disappear, those that provoke it? Above all, this attentive reaction against the 2° Principle of Thermodynamic, since a certain order is believed (the salt that he/she climbs for the vessel, conquering the graveness) starting from a disorder or homogeneous element (the breakup of the salt in the vinegar).
Ilya Prigogine was able to demonstrate that this can happen with its theory of the Structures Disipativas that was worth him the Prize Nóbel of Chemistry in 1977. To establish their theory he/she leaned on in the intriguing reaction Belusov-Zhabotinsky (BZ).
Prigogine, without rejecting the second Principle of Thermodynamic proved that you could draw if three conditions were given: 1°. - that is of a non lineal system, that is to say in the one that the effects are not proportional to the causes; 2°. - That is far from the balance; 3°. - That an energy flow crosses it. The phenomenon of the ascent of the salt is a typical example of structure disipativa, as the reaction BZ. The vinegar, obtained by the acetic fermentation of the wine, although with prevalence of the acetic acid, it is a mixture of numerous different compounds. Although the acetic acid cannot displace to the hydrochloric of the salt, it is probable that, when being saturated this, other reactions begin with other components.
Chemically it is impossible an effervescence that overcomes the mixture. This is a half not very lineal one and far from the balance. Two conditions of Prigogine are completed. The third, that of the energy flow, could it come from these entities or negative forces?
The theoretical of the Free Energy also lean on in the theories of Prigogine to justify the reception of an energy flow starting from the chaotic Energy of the Point Zero. The schools vitalistas suppose the existence of an energy element (bioplasma, orgón, prana, Qi...) that maintains the complexity of the vital phenomenon against the laws of the Physics and of this 2° Principle of Thermodynamic. Appealing to a parallelism, we could imagine something similar that it maintains and it feeds these annoying presences, and to the "maleficio" projected by a sorcerer at distance.
The reaction of the vinegar and the salt that he needs an external energy flow, would catch the energy that you/they require these projections preferably or the sorcerers mobilize. A distortion of the flow takes place and the noxious load finishes vanishing.
In any event, the experiment of the salt and the vinegar is indicative of an environmental energy that can be negative and agitator.
